Brisbane's bayside suburb of Manly opens luxe bar and dining experience, The Arsonist

Bringing the heat to the bayside’s dining scene, flame-powered, The Arsonist, is an 80-seat relaxed fine dining venue on Manly’s esplanade and is the hottest addition from The Consortium Queensland group.

‘Fire’ the origin of all cookery, in its simplest form will transform Manly’s dining scene with Group Executive Chef Mathew Fulford at its helm. With over 20 years in the industry and experience in some of Australia’s finest restaurants such as Lake House, Qualia and Stokehouse, the menu sourced from seasonal, local produce will be grilled, smoked and slow-cooked using fire to deliver unique flavour profiles. The food will be honest, real, and plentiful. Served in large portions intended to be shared, as you would around a campfire.

He counts among his inspirations the smells and flavours of open fire cooking that permeated his childhood in country Victoria. Mat has crafted simple yet elegant taste sensations to tease the palate, from the subtlety of gently-smoked butter, to its signature dry-aged Stockyard OP beef, to the robust intensity of suckling pig. “Gathering communities around fire goes back to the dawn of time. It’s instinctive,” said Mat. “We’ve designed an open kitchen so patrons can share the dynamic experience.” For those seeking to be nearest the action, The Arsonist has two exclusive Chef’s Tables available for up to 8 guests.

The Arsonist fuels a multi-sensory dining experience with its intimate and moody environment, sensually indulgent décor, and evocative sounds and aromas of cooking with fire. Despite a custom-made fire pit and a flame grill complete with impressive moveable gantry, there are no smoke and mirrors – or kitchen walls – here. Patrons may observe the talented chefs, igniting the best of local and seasonal produce.

The speciality bar includes a nuanced wine list, signature smoky gin blended exclusively for The Arsonist, and a superior whisky portfolio. Individual lockable vaults offer discerning whisky connoisseurs and enthusiasts the option to store a bottle of their chosen tipple. The Arsonist will open daily from June and joins Tide on the Jetty in The Consortium Queensland’s stable. The group is committed to developing the Bayside’s burgeoning reputation as a must-do destination for the discerning foodie seeking dining experiences worth savouring.
